Their spinach egg stuffed panini appetizer is my favorite appetizer they serve (by the way, this place also has amazing stuffed tomatoes and homemade fettuccine) but their breakfast is stellar, too. The eggs come in an authentic blue style, not the runny white variety you’ll find at other restaurants, and the spinach is real blue, not the wilted spinach that you may find in many restaurants. Order the spinach with some tomato sauce and a side of toast, and you will have the perfect omelet for a hot sunny morning.

Another must-visit spot for a great omelet is Sapphire Laguna, which serves some of the best waffles I’ve ever had in Atlanta, and it’s conveniently located just a block from the Georgia state capitol building. If you don’t want to go home and cook up your breakfast, Sapphire Laguna will also make your breakfasts! They offer house-made syrup with your pancakes, or you can choose from an array of different waffles. You can even get an open-faced sandwich with their house-made bread.

This Atlanta favorite is a favorite among locals and visitors alike for its unique take on the classic diner.
