Rich, delicious, fluffy vegan breakfast cookies… what more could you want? They’re easy to make and the best part is that they can be made in advance and store-purchased in bulk for when you’re ready for a quick treat. Use a food processor or a blender to puree the cranberries and then add the almond meal. Put your cookie dough in a cookie tin and bake on 350F for about 10 minutes. Remove from the oven and let cool on a cooling rack.
