Preheat oven to 350°F (175°C). Coat a shallow baking pan with nonstick cooking spray. In a small skillet, cook the rice and onion until the onion is tender. Spread rice in a prepared baking pan. 1/4 teaspoon salt

In a small bowl, whisk together eggs, parsley, salt, and pepper until smooth. In a large nonstick skillet over medium heat, cook sausage for 5 minutes or until browned. Add mushrooms; cook for an additional 3–5 minutes. Stir in egg mixture; cook 30 seconds or until firm throughout, stirring occasionally to distribute ingredients evenly. 2 eggs

2 ounces softened goat cheese

1 tablespoon chopped fresh basil leaves

2 teaspoons butter

1/2 cup chopped red bell pepper

In a small bowl, whisk eggs lightly. Stir in cheese and basil. In a large nonstick skillet over medium heat, melt butter until hot but not smoking. Pour egg mixture into skillet; spread vegetables evenly over top of eggs. Cook omelette without stirring for 1 minute or until bottom is lightly browned. Loosen edges with turner; cook 30 seconds longer to allow uncooked egg mixture to flow onto pan surface underneath cooked portion at the edge of omelette. Fold omelette in half with turner; slide onto the plate. Serve immediately. Serves 2–3

Bacon and zucchini Denver Omelette:

1/4 cup finely chopped onion

2 eggs, lightly beaten

1 tablespoon chopped fresh parsley

Lightly coat a large skillet with cooking spray; place over medium heat until hot. Add onion; cook and stir for 5 minutes or until golden. In a bowl, combine onion with eggs and parsley; set aside. Wipe out skillet with paper towel; place back on medium heat until hot. Pour egg mixture into skillet, spreading evenly to cover the bottom of the pan completely. Cook for 1 minute or until light brown around the edges. Run a spatula under the omelette to loosen from the pan; turn the omelette onto the plate in half folds. Arrange bacon slices across the centre of the omelette; fold in half to serve. Serves 1!
